Kadai Chicken Recipe | Lunch or Dinner | Badbola Recipe

Kadai Chicken Recipe is India’s most commonly used chicken dish. Kids love it so does the adults. Overall a house favorite. Kadai Chicken is also known as chicken Kadai. It is a spicy flavored delicious dish. The main ingredients are chicken, tomato, onions, ginger, garlic and fresh ground spices also known as khada masala.

The traditional Kadai Chicken is always present in the Indian restaurants menus, however everyplace has its own variation. The recipe I have shared here is my own take on the popular Indian dish. Also Read: Butter Chicken Recipe | All time Hit | Badbola Recipe

The secret to the dish is the use of fresh khada masala. If these are not available you can also look for Kadai Masala Powder. A lot of brands are selling it, and is readily available.

The 3 main ingredients used for making the masala are :

  • Coriander seeds
  • Red Chilies
  • Fennel Seeds

Apart from these we also use the garam masala.

Kadai Chicken Recipe

Kadai Chicken Recipe: Combine the powerful flavors and aromatics together, and you’d get Chicken Kadai! Succulent chicken is cooked in a rich tomato-based gravy.


  • 1 Whole Chicken (Skin removed, cut into 12 pieces.)
  • ⅓ tbsp Ginger (Paste)
  • 1 tbsp Red chilli powder
  • ¼ tbsp Turmeric Powder
  • 1 tbsp Cumin (Powder)
  • 1 tbsp Cilantro (Powder)
  • 1 tbsp Lemon (Juice)
  • Red food coloring (Optional)


  • 4 tbsp Oil
  • ½ Cup Water
  • ½ Cup Cilantro Leaves (Fresh, divided)
  • 1 tbsp Garlic (Crushed)
  • 1 inch Ginger (Piece, finely chopped)
  • 2 pc Chilies (Chopped)
  • 1 Pc Onions (Medium Size, Finely Chopped)
  • 4 Pc Tomatoes (Medium Size, Chopped)
  • 10 to 12 Curry Leaves
  1. Wash and dry the chicken pieces

  2. Mix all the Marinate ingredients together and add the chicken pieces.

  3. Leave to Marinate for at least 30 minutes.

  4. Once Marinated, heat 4 tbsp. of oil.

  5. Add in the curry leaves, ginger, and garlic.

  6. Cook for 20 seconds and then add in the chilies and onion.

  7. Cook until the onion turns translucent (about 2 minutes.)

  8. Now add in the chopped tomatoes.

  9. Cook until the tomatoes are soft

  10. Now add the chicken to the mix

  11. Season with salt (according to taste)

  12. Cook on high heat, stirring occasionally until oil rises to the top.

  13. This process should take around 5 mins

  14. After the oil appears, lower the heat and add in the water.

  15. Simmer for 10 mins or until the chicken has cooked through.

  16. To serve, garnish with thinly sliced ginger and chopped cilantro leaves.

  17. Serve with a side of bread to enjoy!
